Ingredients:
- 5 cups of full cream milk
- ¼ cup of almonds
- A few strands of saffron
- 6 dates, pureed
- ½ tsp of green cardamom powder
For the garnish:
- 1 tsp of dried edible rose petals
- 1 tbsp of slivered almonds
- A few strands of saffron, steeped in 1 tbsp of lukewarm milk
Method:
- Soak the almonds in water for at least 2 hours.
- Peel the almonds and grind them with a little milk into a smooth paste.
- In a small glass bowl, steep the saffron strands in lukewarm milk to extract maximum flavor and color.
- In a heavy-bottomed, non-stick pan, bring the milk to a boil.
- Add the almond paste and simmer while stirring continuously for 10 minutes.
- Incorporate the steeped saffron strands and the pureed dates, then continue simmering and stirring for another 5 minutes.
- Add the green cardamom powder, mix well, and bring the mixture to a gentle boil. Turn off the flame.
- Serve the Badami Haalu hot, garnished with slivered almonds, steeped saffron strands, and dried rose petals.
